Soup, so simple and so delicious. With a well-stocked pantry, a flavorful soup can be ready in minutes. Vegetables, bones, broths, grains, legumes typically form the base of soup. The processes in making soup are pretty much the same; it is up to the chef to get creative with ingredients. In class, we will make 3 seasonal soups - a puréed vegetable, a broth soup, and a chicken soup from around the world.
Winter Selection:
Celery Root “Bisque” - although the soup looks and tastes like a creamy bisque, it contain no cream at all.
Loon Cafe Chicken Soup with Wild Rice - an American chicken soup using wild rice from Minnesota
Portuguese Caldo Verde - a very versatile soup, which at its simplest contains broth and greens, but it can be turned into a meal with potatoes, beans, and/or sausage.
