In this exciting class, you will learn to make pasta dough by hand and use rollers to make sheets of dough. Then, you will learn to make three different kinds of pasta: noodles, such as pappardelle or fettuccine; lasagna, manicotti or cannelloni; and a filled pasta such as ravioli. Next, you will make sauces and filling for your pastas.
The sauces and fillings for each pasta will vary by season. For example, summer dishes will incorporate fresh tomatoes, basil, zucchini, and corn. In the fall and winter, you will prepare sauces using vegetables such as butternut squash, cauliflower, mushrooms, or cooked tomatoes for a bolognese. In the spring, create sauces with vegetables such as asparagus, English peas or artichokes. Enjoy a meal sampling dishes made with each type of pasta. The meal will be accompanied by salad and gelato sundae for dessert.
