Raclette come from the French word racler, meaning “to scrape”. It refers both to the Swiss melting cheese and to the dish in which melted Raclette cheese is served scraped over boiled potatoes. Gherkins, pickled onions, and sometimes meats are served as accompaniments. A classic winter dish, great for après ski.
