Spring Gratin with Spinach, Artichokes and Farm Eggs

Quartered artichokes are mixed with fresh spinach and soft cooked eggs, topped with a leek cream, local Seahive cheese and baked to brown and blend flavors.   Great accompaniment to chicken and pork entrees.  Also a nice choice as a vegetarian entree.
