October 5, 2019 6pm A Spanish Kitchen in the Fall


This class is all about Spanish flavors. Mar y Montaña (sea and mountains) is a Spanish version of "surf and turf" that contains chicken, Spanish chorizo, shrimp and mussels, piquillo peppers, and seasonal vegetables, served with saffron rice. I like to make this dish when the weather in Park City is too cold to stand outdoors making Paella. This dish is made indoors and, while different, is equally delicious! You will also learn to make some great side dishes. Our appetizer will be small shooters of a Spanish mushroom soup accompanied by bites of a crispy Catalonian-style flatbread with toppings. Learn to prepare a fall salad of oranges and pomegranates and, for dessert, spiced cookies to enjoy with orange curd.


Appetizer: Mushroom Soup IIdiazábal Shooters, Cheese Garnish, and Traditional Catalan Flatbread with Caramelized Onions, Roasted Peppers, Anchovies, and Manchego Cheese
Salad: Valencia Orange and Pomegranate Salad with Olive Oil and Sherry Vinaigrette
Entree: Mar y Montaña with Saffron Rice
Dessert: Polvorones (Spiced Cookies) and Orange Curd
