Pomegranate and Sumac Chicken
Easy Greek chicken dish, great for company or a weeknight dinner. Uses delish ingredients- pomegranate molasses, Aleppo pepper, citrusy sumac, allspice and cumin to create a marinade for the chicken.
Moroccan Fish Tajine
This dish uses white fish fillets such as halibut, sea bass, monk fish (exact choice dependent on market) and is cooked in a charmoula sauce, with olives and vegetables. It is an easy dish with lots of flavor. If you do not have a tajine you can make this in a dutch oven or braising dish.
Pepper Steak "Dal Rae"
This is prime, locally-raised New York strip steak prepared in the style of a classic L.A. restaurant, the “Dal Rae”, that opened in the 40’s - the era of the steak house. The steak is prepared like a classic steak “au poivre”, seared with a coarse ground pepper medley, but then it is topped with a dressing of chopped scallions, bacon, and garlic.
You might ask why I chose this particular dish? In Park City we have access to wonderful local grass fed beef. I wanted a dish to showcase this local product. I grew up in L.A. and the Dal Rae was a special occasion restaurant and dish from my childhood memory and foodie family.
Moqueca - Brazilian Fish Stew
I recently learned to make this dish from a friend. An assortment of fish and shellfish is cooked in a green curry and coconut broth with bell peppers and tomato and served with rice. An exciting dish!
Trumpet Mushroom and Sausage Risotto
This is a traditionally prepared risotto dish with some unique flavor and texture from Trumpet Mushrooms and some slightly spicy Italian Chicken Sausage. Trumpet mushrooms have a mild flavor but an almost meat like textures with creates a nice contrast with the tender rice.
Crispy Braised Chicken Thighs with Salsa Verde
To prepare this rustic Italian dish, you will create a pocket in each thigh to stuff with garlic and herbs, then marinate with lemon peel and additional herbs. Before beginning the braise, the marinated thighs with be weighted, flattened, and cooked to make the skin is completely crispy. The finished braise will yield thighs infused with wonderful flavors served with a fall salsa verde.

Lemon Chicken, Refreshed
When I was a kid. I was obsessed with Lemon Chicken at a local Chinese restaurant. When I ventured to order this as an adult, I was inevitably disappointed by soggy breading and a too sweet sauce. However, I love lemon and chicken and was pretty sure there was a good dish in there somewhere. This is a crispy, panko-crusted, marinated chicken breast topped with a salad of spicy greens and radishes and a tart and slightly sweet lemon peel sauce. Served with Ginger Rice.
Grilling and Chimichurri Sauce
This is our most versatile entree. Chimichurri is a traditional Argentine herb sauce that is a delicious accompaniment to grilled meats, seafood and vegetables. Each individual has the the choice of two of the following items: steak, chicken, salmon or shrimp and vegetarian options of grilled halloumi cheese, vegetables or tofu.

Pan Roasted Salmon Filet with Ratatouille & Shrimp
If you are looking for a seafood dish, this is a perfect choice! Salmon is pan roasted and served over a bed of ratatouille made from seasonal vegetables and a garlic lemon sauce. The entree is finished with roasted shrimp.
