Grilled Halibut with Fregola Sarda and Salsa Verde

This menu features a variety of Italian elements and incorporates locally available spring and summer vegetables, fruits and herbs. We with start with an appetizer of roasted asparagus topped with burrata, drizzled with brown butter, a crisped prosciutto slice, and almonds. Salad is a unique refreshing combination of cucumbers and plum slices in a champagne lemon vinaigrette topped with a light snowfall of gorgonzola cheese. The fish entree (Halibut or best choice of white fish based on market availability) will be grilled and served over fregola, a Sardinian pasta, with seared tomatoes, onions and ricotta salata, topped with Italian salsa verde and side of smashed broccoli. For dessert - butterscotch budino with salted caramel topping.
