Spring Greens with Grilled Chicken and Pecorino "Soufflé"
Each year I look forward to making this dinner. The menu is from a pop-up restaurant, The Basement Table, that I ran with another chef for a couple of years before leaving California. It celebrates the bright fresh flavors and colors of spring. We start with a delicious snap pea salad served with crostini. A boned, grilled mustard chicken is served over a Pecorino pudding which is light like a soufflé, but without the scary "rising and falling" part; and topped with a soft "egg on top" courtesy of Mindful Cuisine's own chickens. For dessert, a beautiful and delicious Strawberry and Chocolate Pavlova.
