Spring Salad with Peas and Greens, Preserved Lemon Dressing and Caramelized Dates
A mixture of English peas, snow peas and spring greens are tossed with a dressing made with quick preserved lemons and delicious Ioulia Olive Oil (Greek Olive Oil imported by a local family from their family farm in Greece). The salad is serve atop of seasoned Ricotta with baguette toasts.
Spring Panzanella
Panzanella is an Italian salad made with seasonal vegetables and croutons giving stale bread new life as it is tossed with olive oil, vinegar and herbs. This spring version contains cucumbers, snap peas and asparagus. The bread for croutons is torn rather than cubed to give it an easier bite and more suface area to absorb flavor.
3 Beets, 3 Ways Salad
This stunning layered salad begins with sliced homemade pickled red beets. A layer of greens dressed with a sherry vinaigrette is next, topped with roasted wedges of golden beets. A second layer of greens follows and is topped with paper-thin slices of Chioggia beets. Bleu cheese and walnuts are additional flavors amid the greens.

Farro with Roasted Carrots and Pistachios and Whipped Ricotta
Farro is an ancient grain full of nutrients and with a delicious chewy texture. Grains are tossed with carrots, pistachios, apricots, lots of herbs, lemon and olive oil and served atop a seasoned whipped ricotta.

Roasted Asparagus and Mushroom Salad
Oven roasted mushrooms and asparagus are tossed with seasonal greens, toasted pecans and crumbled blue cheese in a honey, mustard, and chili vinaigrette.

Charred Carrot Salad
Young spring carrots charred on a grill and served over a bed of seasonal greens with sliced cucumbers and thyme vinaigrette. The salad is finished with grilled goat cheese and balsamic vinegar.

This may sound like an unlikely combination, but it works! I look forward to making this salad as soon as plums are in season! Salad is dressed with a ginger white balsamic vinaigrette and pepperoni, shallots, blue cheese, and purple basil for additional flavor complexity.
