This is a menu with easy preparation and casual elegance. The fresh flavors, spices and cooking techniques are Mediterranean. It is a great “back pocket” menu for a dinner party. The salmon and shrimp are roasted and served with make-ahead sauces. You will also learn a few pickling and food preservation techniques for creating multipurpose condiments to have on hand to enliven everyday dishes.

Salad: Cucumber Salad with Quick Pickled Onions
Entree: Salmon and Shrimp in Spicy Tomato Sauce with Tahini
Side: Asparagus with Preserved Lemon and Pickled Chili
Dessert: Pistachio Lemon Cake
