You have probably heard of and eaten a smashed potato. This is the same concept with a few less carbs. Crispy broccoli, pecorino cheese and a squeeze of lemon.

Lemon Potatoes
My cousin served these potatoes one night while I was visiting. She generously shared the recipe. I love these potatoes!!! Potatoe wedges are roasted in lemon juice and broth until the liquid evaporates and the potatoes are crispy and infused with flavor.
Carrot Tart Tatin
This dish is a savory version of a classic French dessert - Apple Tatin. It is baked upside then flipped over to serve. Between the layer of roasted carrots and crust is a layer of herbed goat cheese. The whole thing is quite yummy!

Hasselback Potatoes
Hasselback potatoes are thinly sliced just enough to fan apart. They are seasoned between the slices, drizzled with garlic herb butter, and baked whole. The potatoes pictured are large potatoes for sharing, but smaller potatoes for individual portions may be used, depending on market availability.
