Caramelized mushrooms and a miso cashew sauce give this pasta dish the perfect sweet and salty balance. This is a great dish to make with increased variety of mushrooms now found in markets. Dry mushrooms can be incorporated to intensify flavor. Fresh herbs are used to finish the dish and brighten flavor.

Royal Trumpet Mushroom "Calamari" with Harissa Mayo & Silician Citrus Salad
The long stems of Royal Trumpet Mushroom when cut into rings have the shape and texture of calamari rings. They are absolutely delicious when coated with panko bread crumbs, seasoned with sumac & za’atar, and fried. The dish will be accompanied by a beautiful Sicilian salad of citrus, fennel, olives and greens.

Smoked Cauliflower and Multigrain Waffles

This risotto takes advantage of the variety of mushrooms easily available in to todays markets, for example osyter mushrooms of various color, trumpet, maitaike, shiitake and more. We will use best available and cook the rice in a porcini mushroom broth.
